A wonderful day with wonderful food

I truly had a great Thanksgiving yesterday. It was definitely the most different thanksgiving I’ve ever had since I was away from my family, but it was good nonetheless. I got to spend the day with my amazing boyfriend and his wonderful family. We had our feast around 2:00 and munched the rest of the day. At first I was skeptical of this idea, I didn’t know if I’d be in the mood to eat “dinner” food in the afternoon, but being prepared that it was going to be a mid-day feast I was more than ready by the time the food was served. Everything was delicious and then I had the rest of the day to relax, digest, and eat some desserts 🙂

The pictures above are my baking creations. The top left is a very ugly apple pie that I made for Chris just using a traditional, non-healthy recipe. I have been dying to make these cupcakes ever since I saw them on Peanut Butter Boy’s site, and so I thought why not make them for thanksgiving? They aren’t very traditional, but they combine my three favorite foods ever: banana, peanut butter, & chocolate, so they were heaven in my eyes. They turned out delicious in my opinion, not too sweet which is just how I wanted them.

I’m happy to say I think I did really well yesterday. It is the first thanksgiving since I’ve been at my final goal weight and I’m happy to say that I did not overdue it to the point of sickness. I enjoyed the holiday and treated myself, but not to the point of being ill- yay!

Well I hope everyone had a great thanksgiving & we all have a TON to be thankful for. I feel so lucky and have so much to be grateful for, and I was really thinking about it yesterday.

Now I’m in the mood for Christmas, woo hoo! It is probably madness out there today on black Friday, but hopefully the store I work at won’t be too insane by the time I work (4:00). It probably still will be though.

Time flies when you’re baking…

Time sure does fly when you’re baking- I don’t know why but I can be in the kitchen for hours cooking/baking without even realizing it! Before I go into my baking adventures, a recap on the food of the majority of yesterday:

Lunch was a Romaine/Grape salad and a turkey sandwich on whole-grain Panera Baguette. I love buying the baguettes at Panera and freezing them in portions for my lunches. The bread is my favorite thing there and it’s a lot cheaper to make it at home that way.

I ended up working yesterday from 3-7 and ate the apple on the way to work- I was still hungry all throughout work, but I didn’t have time for anything more. On my ten minute break I ate half of a Kashi trail mix bar.

When I got home from work I was still starving- I just wanted food in my belly ASAP. I threw together a chicken caesar salad with leftover grilled chicken and cooked up some green beans.

For dessert I made myself a peanut butter parfait, which is my new favorite dessert. I used non-fat cherry/vanilla yogurt.

I was in a big baking mood last night and Chris’ sister wanted me to make her some banana muffins that I’ve been making recently so that is what I did:

The photograph on the right is plain banana and the left is miniature banana with mix-ins. Some have blueberries and some have chocolate chips.

Whole-Wheat Banana Muffins (makes 18 regular sized muffins)

2 cups whole wheat pastry flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
3 medium bananas
2 whole eggs
1/3 cup honey
1/2 cup skim milk
1/2 cup applesauce, unsweetened

Optional mix ins:

-walnuts

-raisins

-chocolate chips/peanut butter chocolate chips

-blueberries

-etc.

Directions:

Pre-heat oven to 350 F. In a large bowl combine flour, salt, baking soda, and baking powder. In another bowl combine mashed bananas, eggs, honey, milk, and applesauce. Fold wet into dry and place in non-stick or greased muffin pan.

Nutritional Analysis:
Calories: 100

Total fat: 1 g

Sodium: 90 mg

Potassium: 105 mg

Total Carbohydrates: 21 g

Protein: 2g

After making these, I was still in the mood to bake and craving something sweet so I made Honeyed Chocolate Chip Cookies from Baking Bite’s.

The only changes I made to these were halving the recipe, using less salt (I always reduce the sodium and never miss it in my baked goods), and I used Smart Balance instead of butter. I ate a ton of the cookie dough which made my tummy hurt. 😦 It was good, but by the time they were done I was feeling too sick to eat one of my creations, so I just had a bite of one. Everyone else has been enjoying them though, so I’m glad they were a success.

Tuesday Morning:

This morning I woke up not very hungry, but am so used to eating first thing I had made myself a banana and p.b. and one of may small banana muffins topped with p.b. I thought it was one of the plain muffins, but to my surprise when I cut it open I got a chocolatey surprise, yum! I heated it in the micro too and it was delicious.

I also had a mixed bowl of Kashi cereals which was 1/4 cup of heart-to-heart, puffs, go-lean, and go-lean crunch with 3/4 cup of skim milk. By the time I got to the p.b. banana, I was feeling too full and put it in the fridge for later. When I ate it pre-gym it was nice and cold, I think I’m going to refrigerate that combo more often!

I went to the gym for a weight-lifting class. I honestly don’t enjoy strength-training and find it a struggle to do it on my own so the classes are a bit better since I have someone making me do it, but I still find myself struggling and giving up a lot more than in cardio classes. I’m a cardio-whore, but I do like the painful sensations of worked muscles the next day after strength, plus I know I need to do it to tone and keep my bones strong and all that good stuff. Anyways, today’s teacher was a sub and kind of looked like a man… Clay Aiken to be specific. And she had really buff arms that freaked me out more than made me admire them. She was really really nice though, so I felt bad for thinking she looked like a man, but I’m not even exaggerating here.

Well, I’m a crappy blogger I realized. I am much better at reading people’s blogs than doing my own. I feel like I already spend a lot of time of my day creating healthy meals,  working out, thinking/talking about food/exercise, reading other food blogs, and all that that this just may be too much for me. I really admire people who can do it AND go to school, jobs, and everything. I think it’s amazing that they do and I really love reading other people’s, but jeeze, I don’t know if I have this much dedication. I want it to be something fun, and not feel bad if I don’t post everyday or photograph every bite that goes into my mouth. I’m not saying I’m giving up already, but I think I’m going to just see how it goes, if I feel like posting/photographing, I will. And I won’t if I don’t. But I do want to explore new foods and ideas and obviously still read the blogs I enjoy, but I guess I’m just not cut out to be a steady blogger myself.

Peanut Butter + Banana= Heaven in Your Mouth

I better get this out on the table– I have a major obsession with the peanut butter & banana combo. Add some chocolate in there, and I could die the happiest girl on earth 🙂 It is by far my favorite fruit & nut combo out there.

Barney Butter & banana is also freakin’ delicious. Ever since Tina starting raving about BB on her blog I wanted to try it and was excited when I saw it in my local grocery store. It was even on sale for $8.99, so I had to get it. My jar is getting low though so it’s going to be time to dish out some big bucks for a new one soon. It’s sooo worth it though!

Well, I am quickly remembering why my previous food blog didn’t last more than a month… it is really hard to take a picture of everything I eat. I am quite the snacker/nibbler so it is a lot of work to take pictures of every bite. We’ll see how long it lasts and I’m not going to be super hard on myself- I’m just doing this for fun, I don’t want it to become some daunting task or chore.

And since I’ve already been slacking, here is a recap of last night’s eats:

For an afternoon snack I had plain yogurt & some granola w/some grapes. For dinner I had leftover chicken-pesto pizza from a place called Pizza Fusion which is earth-friendly and utilizes a lot of organic ingredients. It’s tasty, but kind of pricey. After dinner we went to Chris’ grandma’s house where I snacked on a clif bar and an apple and when I got home I had some more grapes. (Did I mention I’m a little addicted to grapes as well?!)

Monday Morning Eats:

This morning I had my favorite Barney Butter & banana combo and a small bowl of oatmeal. I only started liking oatmeal about 2 weeks ago when I woke up one morning craving oatmeal. It was pretty strange because any other time I tried it I couldn’t get over the mushy-ness, but now it doesn’t bother me and I even like it. I still have to add lots of cinnamon and prefer something crunchy on top, but I actually enjoy it.

Today’s combo included:
-1/3 cup oats, water, & skim milk

-Dash of Cinnamon

-1 Tbsp of Raisins

-1 Tbsp of Kashi Go Lean

Delicious! I have plans of baking today, so hopefully I get to it. I may or may not be working today, I have a call-in shift at work from 3-7 and will find out if I work or not at 1. I don’t want to work- but I want the money, guess we’ll see what they say when I call.

What is your favorite oatmeal combo? I have seen so many great combos online, but haven’t gotten to adventurous yet, I’ve only tried cinnamon raisin or banana & pb.

Good, but not too exciting

Both today and my lunch have been good, but not too exciting so far. I’ve just been lounging around, catching up on blogs, and relaxing. It’s been nice, but I’m in need of some activity so I’m going to head to the gym after this.

For lunch I had a simple salad with carrots, a turkey sandwich on whole wheat, and grapes. Don’t know the plans for the rest of the day, but we’ll see how it goes!

First Entry!

What better day than Sunday to start my new blog? I love Sundays because they are the beginning of a fresh, new week. Even though Mondays still always feel like the beginning of the real week.

This morning I woke up starving. I was craving cereal and toast with peanut butter & banana, so I had both.

Well it’s beginning to look like Christmas around here! I’m living with my boyfriend’s family for a few months and they’re putting up all the decorations and tree this morning. It’s definitely getting me in the spirit, even though it doesn’t feel like Thanksgiving should be this week since the weather here in So Cal is in the 80’s.

What gets you in the spirit of the holidays? I used to LOVE putting up all the decorations with my family and listening to Christmas music, that was always the beginning of the season for me.
