Whirlwind

Man, where have these past few days gone? They’ve flown by so quickly!
Where did I leave off? Oh yeah, Saturday night. These are the munchies I snuck into the movie theatre.

Pistachios (from forever ago- they’re safe), grapes, and carrots. Great snacky foods- not so great movie. Skip Adventureland- all the funny parts were in the commercials and it was pretty boring & slow moving. I usually like movies like that, but not this one.

Sunday:

I honestly don’t remember much about this day, but here are the eats.

Tuesday:

DSCN0526 Breakfast: Bear Mush Cereal. I had never heard of it, but saw it at the grocery store & thought it looked interesting. It’s hard red wheat & I cooked it just like oatmeal. The consistency was pretty mushy, but I guess that is kind of a given with the name 😉

DSCN0529 I didn’t love it, but the verdict is still out- I think I need to get used to the texture just like I did with oatmeal.

I started school yesterday so lunch was eaten in my car before class.

DSCN0538 Snack: Clif White Chocolate Macademia Nut Bar I had been reading about forever in blogland and finally found. It was very good like everyone’s said- but pretty sweet. Definitely a great treat to keep me entertained in class.

DSCN0542 Dinner: Everyone had already eaten or wasn’t hungry so I was on my own and tired after my first long day at school so I just made a turkey sandwich, sweet potato, & reheated Cosi soup.

So, as you can see things have been busy and eats have been pretty boring. Times like these make me admire food bloggers more and more. My aunt and Gramma came into town today so we have been hanging out with them and don’t know what is up for the rest of the day. I just know I have some homework to do before the day is over- oh the joys of being back in school. It is good to be back though and now I’m moving on with my life! I am so excited to become an RD someday or be in the health/nutrition field, so I just have to keep that in mind and it will be all worth it. My statistics teacher mentioned RD’s and health professionals since it’s geared towards health science majors and that alone made me excited. I can’t wait to actually be in classes relating to my food science and nutrition major!

Even too ripe for me…

The timings of my meals have been pretty screwed up lately, but I guess that’s what happens when I don’t have a job or school schedule to stick with for now. (Only 3 more days until school… eek!) Dinner last night was simple but enjoyable. I wasn’t feeling too creative so I went with the classic dinner at my house: chicken and/or salmon on the grill, vegetable (asparagus), and sweet potato.

Altogether, eaten at the “bar”/counter. My dad & I watched the end of Biggest Loser and Unwrapped while we ate.

I had been thinking about frozen yogurt all day, so after we cleaned dinner up I asked my dad if he’d like to come watch me eat some. I prefer to have company when eating, especially dessert. He just likes to go and sample all the flavors since it’s serve yourself and they don’t seem to mind. I made myself a delicious combination of my favorites.

It hit the spot and was the perfect ending to my relaxing Friday night. Afterwards, I headed over to Chris’ to spend the night there and may have snacked on some of his curly fries from Jack in the Crack. hehe.

Chris and I sort of have an odd living arrangement for the fact that we live together but switch off nights between his parents house and my parents house. It’s pretty cool but sometimes can be a pain when we forget things at one house or whatnot, but it works out the majority of the time. The last 2 weeks though his family has been out of town and their house is too big and creepy to stay there alone, so we spent every night at my house.

Well, this morning I was rummaging through my food cabinet they let me keep at his house (stocked with the essentials: Kashi cereals, oatmeal, a vast array of nut butters, & bananas when I’m there since they disappear super quickly at his house).

Don’t get me wrong, I love ripe bananas and love when they get spotty for their sweetness and softness. I also get excited when they get old because it’s instant baking opportunity. However, the banana I found this morning was even too ripe for my liking:

I laughed pretty hard when I found this and thought it had to be documented. I completely forgot I had left a banana in there for 2+ weeks… oops!

Luckily, I had brought a banana perfect for adding to my oatmeal this morning.

This morning (afternoons?) oatmeal had a nut theme goin’ on:

-1/2 cup oats, water, chocolate almond milk

-banana, cinnamon

-1/2 TBSP chopped walnuts, cooked in

-heaping spoonful of Barney Butter on top

-1/2 mini pb clif bar crumbled on top

I’d definitely recommend this on top, it was perfect. Nothing better than the peanut butter/banana combo in my opinion.

Today’s agenda includes hitting up the gym after this post for a quick sweat session & then a day full of clothes shopping- yay! I need new clothes pretty badly.

I Eat A Lot

Dang man, I feel like I eat a lot when I photograph everything I eat. Or at least it seems like I’m eating all the time when I keep whipping out the camera.

Today was a good day- not the most productive, but hey, I’m unemployed. I’m entitled to be unproductive. 🙂

In the afternoon my tummy started rumbling again so I warmed up a PB clif z-bar in the micro- it totally felt like a dessert- delish!DSCN0142

I spent the afternoon doing some baking and was planning to make myself dinner when my mom offered to go out for dinner. It’s hard to turn down a free meal. We went to my new favorite restaurant lately, Red Brick Pizza. For some reason I really love their Chicken Caesar Salad more than other places. It’s HUGE for the price- so maybe that’s why. And they have good croutons.

I also had half a slice of Chris’ Veggie pizza which I forgot to photograph. It was good though and I normally don’t like things with that many veggies on it. Then even though I was content, my bad-influence wonderful mother suggested frozen yogurt from Yogurt Land across the street. Now how can I turn that offer down?!

I got non-fat chocolate/butterfinger swirl fro-yo topped with banana slices (!!!!), peanut butter swirl chocolate chips, brownie bites, cookie dough, and peanut butter cup. It was amazing.

I’ve been listening to Pandora radio all day and I love every song they’ve played so far– how come I haven’t done this earlier?!

Steel-Cut Goodness & V-day

Good Morning!

Ever since Jamba Juice came out with their steel-cut oats I have not been super satisfied with my regular rolled oats that I have absurdly grown to love.  I can’t believe I love any oatmeal at all, but I really love the texture of the steel-cut variety. So a couple weeks ago I bought some of my own steel-cut oats to try. The first time I cooked them, I burned them to the bottom of the pot because I thought it was supposed to take 30 minutes to cook– oops! Then the second time I tried the crock pot method which was awesome the next morning. Tasted just like Jamba; the only problem being that I’m the only one who really eats oatmeal in the house so I had 3 extra servings which were purely disgusting the next morning and could not be salvaged. Lame.

DSCN0105This morning I gave them another shot since I had more time this morning. I stood over them the entire time and cooked them like I do stove-top rolled oats. Except the proportions were different since they’re steel cut. Here’s how I did it and it turned out scrumptious:

*1/4 cup dry steel-cut oats

*1/4 cup skim milk, 1/2 cup water

*Dash of cinnamon

*whole banana added towards the end

*topped with Kashi Go lean Crunch & Cinnamon Raisin PB

 Directions:

1) Add oats, milk, water & cinnamon to pot & turn on medium-high heat

2) Watch & Stir (mine took about 8 minutes)

3) Add banana about a minute or two before done

4) Top with your favorite toppings & Enjoy!

I really like the crunchiness texture, I don’t know if I will change to eat these every morning just because of the extra time, but they are definitely a nice treat for mornings I’m not in a rush. I have some wheat berries I’ve been dying to try in my oatmeal since everyone in blogland is hooked on them, but I also had a disaster the first time I tried cooking those… don’t ask, I’m apparently the only person who can burn anything, even wheat berries 😛 I imagine though, that they will give a nice texture to the oats similar to the steel-cut but in less time, so I’m going to give those a try very soon.

Now on to my Valentine’s Day recap. By the way, I would love to be a regular blogger, I just really don’t know how people do it. I’m such a snacker I would be photographing ALL day long and I’m not as busy as many of the bloggers, I just don’t know how they fit it in everyday, some people 3 times a day! Anyways, I’m very inconsistent with my posts as you can tell, but maybe some day I will be a regular blogger.

Valentine’s Day 2009

Chris and I didn’t know what we were doing for Valentine’s Day up until a few days before the day. I took off work and wanted to do something fun and special, but with us both being pretty poor and broke, our options were pretty limited. I offered to cook a romantic dinner since it was cheap and would be fun. I did it the first year we were together and we had a really good time. The first year I made steaks on the grill and ate it just for him. This time, I made pulled BBQ pork sandwiches in the crock-pot. I hadn’t eaten pork or red meat in at least 5 months and ate it just for him this V-day. I admit though, it was pretty delicious. I even bought a sweet BBQ sauce that had high-fructose corn syrup as the first ingredient because he told me he liked sweet sauces and that one looked good– oh I hope he knows I love him 🙂

For side dishes we had green beans & corn for me, mac & cheese for him. He was a sweetheart and brought me roses even though I told him not to. He said it was Valentine’s Day so I needed roses. He’s so sweet ❤

We both agreed it was the best Valentine’s Day we’ve ever had and I can’t wait DSCN0090for many more great ones to come. I’m such a cheese-ball and so many people are so anti-valentine’s day, but you don’t have to make it a hallmark holiday if you don’t want to. You can just make it a special day to appreciate the one(s) you love. Hope everyone had a great V-day as well and for those of you who hate it, at least it’s over for the year 😛

Time flies when you’re baking…

Time sure does fly when you’re baking- I don’t know why but I can be in the kitchen for hours cooking/baking without even realizing it! Before I go into my baking adventures, a recap on the food of the majority of yesterday:

Lunch was a Romaine/Grape salad and a turkey sandwich on whole-grain Panera Baguette. I love buying the baguettes at Panera and freezing them in portions for my lunches. The bread is my favorite thing there and it’s a lot cheaper to make it at home that way.

I ended up working yesterday from 3-7 and ate the apple on the way to work- I was still hungry all throughout work, but I didn’t have time for anything more. On my ten minute break I ate half of a Kashi trail mix bar.

When I got home from work I was still starving- I just wanted food in my belly ASAP. I threw together a chicken caesar salad with leftover grilled chicken and cooked up some green beans.

For dessert I made myself a peanut butter parfait, which is my new favorite dessert. I used non-fat cherry/vanilla yogurt.

I was in a big baking mood last night and Chris’ sister wanted me to make her some banana muffins that I’ve been making recently so that is what I did:

The photograph on the right is plain banana and the left is miniature banana with mix-ins. Some have blueberries and some have chocolate chips.

Whole-Wheat Banana Muffins (makes 18 regular sized muffins)

2 cups whole wheat pastry flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
3 medium bananas
2 whole eggs
1/3 cup honey
1/2 cup skim milk
1/2 cup applesauce, unsweetened

Optional mix ins:

-walnuts

-raisins

-chocolate chips/peanut butter chocolate chips

-blueberries

-etc.

Directions:

Pre-heat oven to 350 F. In a large bowl combine flour, salt, baking soda, and baking powder. In another bowl combine mashed bananas, eggs, honey, milk, and applesauce. Fold wet into dry and place in non-stick or greased muffin pan.

Nutritional Analysis:
Calories: 100

Total fat: 1 g

Sodium: 90 mg

Potassium: 105 mg

Total Carbohydrates: 21 g

Protein: 2g

After making these, I was still in the mood to bake and craving something sweet so I made Honeyed Chocolate Chip Cookies from Baking Bite’s.

The only changes I made to these were halving the recipe, using less salt (I always reduce the sodium and never miss it in my baked goods), and I used Smart Balance instead of butter. I ate a ton of the cookie dough which made my tummy hurt. 😦 It was good, but by the time they were done I was feeling too sick to eat one of my creations, so I just had a bite of one. Everyone else has been enjoying them though, so I’m glad they were a success.

Tuesday Morning:

This morning I woke up not very hungry, but am so used to eating first thing I had made myself a banana and p.b. and one of may small banana muffins topped with p.b. I thought it was one of the plain muffins, but to my surprise when I cut it open I got a chocolatey surprise, yum! I heated it in the micro too and it was delicious.

I also had a mixed bowl of Kashi cereals which was 1/4 cup of heart-to-heart, puffs, go-lean, and go-lean crunch with 3/4 cup of skim milk. By the time I got to the p.b. banana, I was feeling too full and put it in the fridge for later. When I ate it pre-gym it was nice and cold, I think I’m going to refrigerate that combo more often!

I went to the gym for a weight-lifting class. I honestly don’t enjoy strength-training and find it a struggle to do it on my own so the classes are a bit better since I have someone making me do it, but I still find myself struggling and giving up a lot more than in cardio classes. I’m a cardio-whore, but I do like the painful sensations of worked muscles the next day after strength, plus I know I need to do it to tone and keep my bones strong and all that good stuff. Anyways, today’s teacher was a sub and kind of looked like a man… Clay Aiken to be specific. And she had really buff arms that freaked me out more than made me admire them. She was really really nice though, so I felt bad for thinking she looked like a man, but I’m not even exaggerating here.

Well, I’m a crappy blogger I realized. I am much better at reading people’s blogs than doing my own. I feel like I already spend a lot of time of my day creating healthy meals,  working out, thinking/talking about food/exercise, reading other food blogs, and all that that this just may be too much for me. I really admire people who can do it AND go to school, jobs, and everything. I think it’s amazing that they do and I really love reading other people’s, but jeeze, I don’t know if I have this much dedication. I want it to be something fun, and not feel bad if I don’t post everyday or photograph every bite that goes into my mouth. I’m not saying I’m giving up already, but I think I’m going to just see how it goes, if I feel like posting/photographing, I will. And I won’t if I don’t. But I do want to explore new foods and ideas and obviously still read the blogs I enjoy, but I guess I’m just not cut out to be a steady blogger myself.

Peanut Butter + Banana= Heaven in Your Mouth

I better get this out on the table– I have a major obsession with the peanut butter & banana combo. Add some chocolate in there, and I could die the happiest girl on earth 🙂 It is by far my favorite fruit & nut combo out there.

Barney Butter & banana is also freakin’ delicious. Ever since Tina starting raving about BB on her blog I wanted to try it and was excited when I saw it in my local grocery store. It was even on sale for $8.99, so I had to get it. My jar is getting low though so it’s going to be time to dish out some big bucks for a new one soon. It’s sooo worth it though!

Well, I am quickly remembering why my previous food blog didn’t last more than a month… it is really hard to take a picture of everything I eat. I am quite the snacker/nibbler so it is a lot of work to take pictures of every bite. We’ll see how long it lasts and I’m not going to be super hard on myself- I’m just doing this for fun, I don’t want it to become some daunting task or chore.

And since I’ve already been slacking, here is a recap of last night’s eats:

For an afternoon snack I had plain yogurt & some granola w/some grapes. For dinner I had leftover chicken-pesto pizza from a place called Pizza Fusion which is earth-friendly and utilizes a lot of organic ingredients. It’s tasty, but kind of pricey. After dinner we went to Chris’ grandma’s house where I snacked on a clif bar and an apple and when I got home I had some more grapes. (Did I mention I’m a little addicted to grapes as well?!)

Monday Morning Eats:

This morning I had my favorite Barney Butter & banana combo and a small bowl of oatmeal. I only started liking oatmeal about 2 weeks ago when I woke up one morning craving oatmeal. It was pretty strange because any other time I tried it I couldn’t get over the mushy-ness, but now it doesn’t bother me and I even like it. I still have to add lots of cinnamon and prefer something crunchy on top, but I actually enjoy it.

Today’s combo included:
-1/3 cup oats, water, & skim milk

-Dash of Cinnamon

-1 Tbsp of Raisins

-1 Tbsp of Kashi Go Lean

Delicious! I have plans of baking today, so hopefully I get to it. I may or may not be working today, I have a call-in shift at work from 3-7 and will find out if I work or not at 1. I don’t want to work- but I want the money, guess we’ll see what they say when I call.

What is your favorite oatmeal combo? I have seen so many great combos online, but haven’t gotten to adventurous yet, I’ve only tried cinnamon raisin or banana & pb.
