Man, where have these past few days gone? They’ve flown by so quickly!
Where did I leave off? Oh yeah, Saturday night. These are the munchies I snuck into the movie theatre.

Pistachios (from forever ago- they’re safe), grapes, and carrots. Great snacky foods- not so great movie. Skip Adventureland- all the funny parts were in the commercials and it was pretty boring & slow moving. I usually like movies like that, but not this one.

I honestly don’t remember much about this day, but here are the eats.

DSCN0489Breakfast: Oatmeal with Clif Bar crumbles

DSCN0493Lunch: Jamba Juice Strawberry Nirvana & Oatmeal w/banana slices

DSCN0498Dinner: Broccoli, Sweet Potato, and Cajun Catfish

DSCN0500 I’ve only eaten and like Salmon before, but felt like being brave and bought some catfish at the store. It was pretty good, I’m still not used to the fishy texture- but definitely could get used to it!

Snacks: unpictured, and I don’t remember what they were, but I’m sure it included lots of grapes

DSCN0515Breakfast: Oatmeal with caramel chip trail mix

DSCN0516 Lunch: Cosi signature salad, tomato-basil soup, & 1/2 whole grain bread

DSCN0518 Snack: Fruit Bowl

DSCN0519 Another snack: Chocolate Chip cookie, Newman’s Own PB cookie, a few Trader Joe’s peanut butter cups

DSCN0523 Dinner: Applebee’s Apple Walnut Chicken Salad w/o bleu cheese

DSCN0525 Nighttime Snack: Grapes!!

DSCN0526 Breakfast: Bear Mush Cereal. I had never heard of it, but saw it at the grocery store & thought it looked interesting. It’s hard red wheat & I cooked it just like oatmeal. The consistency was pretty mushy, but I guess that is kind of a given with the name 😉

DSCN0529 I didn’t love it, but the verdict is still out- I think I need to get used to the texture just like I did with oatmeal.

I started school yesterday so lunch was eaten in my car before class.

DSCN0534Salad with grapes & carrots

DSCN0537  Apple while studying (It’s sooo true about being more hungry when you are using your brain!)

DSCN0538 Snack: Clif White Chocolate Macademia Nut Bar I had been reading about forever in blogland and finally found. It was very good like everyone’s said- but pretty sweet. Definitely a great treat to keep me entertained in class.

DSCN0542 Dinner: Everyone had already eaten or wasn’t hungry so I was on my own and tired after my first long day at school so I just made a turkey sandwich, sweet potato, & reheated Cosi soup.

DSCN0546 Dessert: 2 bowls of unpictured grapes, Trader Joe’s flattened banana, & a yogurt pretzel

So, as you can see things have been busy and eats have been pretty boring. Times like these make me admire food bloggers more and more. My aunt and Gramma came into town today so we have been hanging out with them and don’t know what is up for the rest of the day. I just know I have some homework to do before the day is over- oh the joys of being back in school. It is good to be back though and now I’m moving on with my life! I am so excited to become an RD someday or be in the health/nutrition field, so I just have to keep that in mind and it will be all worth it. My statistics teacher mentioned RD’s and health professionals since it’s geared towards health science majors and that alone made me excited. I can’t wait to actually be in classes relating to my food science and nutrition major!

Well happy humpday everyone, it’s all smooth sailing from here!

I’ll leave you with pictures of the red velvet cupcakes I made on Chris’ request the other day:

My clothes shopping ended up being pretty unsuccessful. The only pair of jeans I  liked had a broken zipper and no others in my size, ugh. It’s okay though, I did get 4 bras for $40 & realized my aunt and Gramma are coming next week and they like to go shopping so maybe they’ll go with me.

My gym workout was good- I did 45 minutes on the Stairmaster & 15 minutes of free weights for arms & abs. When I got home Nikki (Chris’ sister) asked if I wanted to go for a bike ride. Since it was a beautiful day & all I went with her on my crappy old purple bike that I keep at Chris’. Dang it was torture compared to my new bike, but we took it slow and it was quite enjoyable. I stopped at a grocery store on trip because I was having a hardcore apple craving.

I was on my own for lunch & shopping since Chris went out with his friends for sushi. There was no food at the house so I stopped by souplantation and made myself a salad to go.

  • spinach/dark lettuce/iceburg
  • green peppers
  • carrots
  • zucchini
  • radishes
  • chickpeas
  • raisins
  • wonton strips/croutons

I was craving salad really bad and this was great, except that I ate it in my car. I really need to get over my eating alone in public thing.

I got a Strawberry Nirvana from Jamba Juice during my shopping trip. I ordered a small, but I guess it came out big. Hey, I don’t mind 🙂

When I gave up came home from shopping, I had a Sarah-inspired snack of yogurt w/granola & 100 cal kettle corn. I also had some carrots to up my veggie intake.

And I couldn’t go a day without grapes. These were extra good and crunchy too.

Turns out I am going to get to see Adventureland after all! Chris and I are going in about an hour, yay! Hope it turns out to be funny, not just stupid. It looks like it could go either way. I’m sure I’ll be sneaking some more snacks into the theatre, I love doing that 😀

Call Me Betty

I finally finished baking the apple pie that I started making the dough for two days ago. The only healthy thing about this pie is that it contains apples, but I was making it for my boyfriend and Dad and wanted to make sure they enjoyed it.

I felt like such the little Betty Crocker pulling this out of the oven. The top got a little burned, but it still looks pretty good. Nobody has tried it yet, but I’ll let you know what my critics thought when they do. I’m not a fan, so I won’t be taste-testing this one 🙂

It’s amazing how much time baking takes, but I enjoy it so much time just flies by when I’m in the kitchen.

For lunch my dad and I went to Red Brick Pizza and I got my favorite, Chicken Caesar Salad. For some reason theirs is the BEST. It’s huge and their chicken is really flavorful & the croutons are awesome.

I, of course, had no problem finishing it off 🙂 I can always take on a big salad.

After baking up a storm, I was craving some fruit. I had a mix of pineapple, strawberries, and grapes. The strawberries are pretty “blah” so I’m trying to use them up. I also had some in my afternoon yogurt w/granola.

I’m also finally getting around to watching Biggest Loser from this week & then it’s Dancing with the Stars after that! Man, I’m such a weird 21-year-old for spending my Friday night baking & watching TV. But hey, who cares, right? I’m happy. 🙂

Buh Bye for now!

Oh Happy Day!

This afternoon was very relaxing and enjoyable– just like everyday should be. I did some baking projects I wanted to get to, but they aren’t done yet so I’ll post when they are.

I went for a bike ride and stopped by the grocery store on the way home.  Before my bike ride I had some grapes. I was excited to get on my bike because I got it tuned up yesterday; the gears were making funny noises. Well it is still making strange noises in the first gear, but then finally becomes quiet- I’ll have to ask my dad what’s up with it or if that’s normal. I got so caught up in my biking and baking that I realized I needed to eat asap. When I got home I chowed on a lot of carrots (more than shown here) and made Chris a veggie sandwich cuz he was hungry too.

DSCN0408 Mmm… check out all those veggies, I wish that was my lunch, but unfortunately my tastes aren’t that evolved yet…. yet.

So instead I had a turkey-spinach wrap on a La Tortilla Factory wrap. And some more fruit. It was almost 6:00 before I sat down to eat this and I’m meeting Jess at 8, so I kept it lighter. My meal times have been kinda screwy in the last week since I’ve been sleeping in so late, but once again, I’m going to enjoy it while I can!

I’m watching Oprah right now about “weight loss in the public eye.” They had Valerie Bertinelli, Marie Osmond, and Star Jones on. I liked a few things they had to say about being healthy and not just thin, but each one had some sort of aid. Valerie is Jenny Craig, Marie is Nutra-system, and Star Jones had gastric bypass and hid it. I just think that it says you can’t do it on your own- which you CAN. It may even be easier than trying to eat that nutra-system sh**!! I’ve heard so many bad things about how nasty that food is and saw my aunt’s huge, un-refrigerated box of processed meals over this summer. I even took a look at the nutrition information and was not impressed. They had lots of sodium, not to mention it was hard to find an ingredient I could pronounce let alone knew what it was. Yuck. I just think it’s sad that people watching who need help are going to think they need a packaged meal program or surgery to get healthy. However, some people really do need those things for success, so I guess that is good. Thank god I’m not a celebrity, because I wouldn’t be able to have tabloids and tons of people talking about me when I couldn’t even handle my one friend’s comments lol.

Now I’m just waiting to go to dinner and snacking on some grapes in the meantime. My baking project just came out of the bread maker and looks like a flop… I’ll let you know how it turned out for sure after proper taste testing 😉

Party in a Bowl

Have I mentioned how much I love my bread maker?! It’s sooo simple and easy. I did make pizza dough in it the other day (thanks for the suggestion, Sarah)which turned out perfect. I just forgot to photograph it because we were in a hurry that night. Last night I made more cinnamon raisin bread with a different recipe and I think this one turned out even better.

I toasted and buttered a few slices for Chris this morning on his way off to work and had a small slice for myself. Yumm

But of course I couldn’t skip my oatmeal- I was craving a fun mixture today so I went with my trail mix oats in my new bowl. I love adding the trail mix on top because it feels like a party in a bowl.

-1/4 cup oat bran, 1/2 c water, 1/2 c skim milk

-1 large banana, 1/2 added in beginning, half added towards end

-dash of cinnamon

-1 Tbsp PB on spoon

-2 Tbsp Trail mix topping

I love how it gets while eating it- when the chocolate pieces melt and get all mixed in. It looks like a pollock creation or if you stare at it long enough it sort of becomes gross looking. It was delicious nonetheless & I enjoyed every bite.

Shortly after I was craving some fruit so I had a banana and some grapes.

Like the cute bowl my mom painted? It’s adorable but took her at least 4 hours! She’s such a perfectionist when it comes to pottery painting and gets so serious and focused- it’s quite funny and cute.

I’ve been having a great morning. I woke up to 2 very sweet e-mails from Sarah and Louise, my sister, about my last post. Thanks, guys, you are the best 😀 I feel so much better and am going to write a quick note back to the girl today just to let her know I’m fine and I am going to slowly let our friendship go. It really doesn’t have much to do with her e-mail, just what I’ve been feeling for a long time. Plus she’s getting married in 2 months so I’m sure things will be changing a lot anyways. Once I do that, I think I will finally be done with this thing that I made way too big of a deal about. Oh well, you can’t help how you react sometimes I suppose but thanks again for everything.

My plans for today are to continue to be a lazy bum and enjoy my last week before school starts. (Gotta enjoy it while you can, right?!) I have dinner plans tonight with an old friend from high school that I haven’t seen since I moved back to Cali. It should be good to catchup with her. Hope everyone’s having a great Wednesday!

P.S. I know the mind is powerful, but dang my legs are sore today!!

A bit overzealous

I have been loving biking lately- I’ve been hooked on cycling/spinning classes for a year now and a few weeks ago I finally got a bike that I could use to get around town. Well, the last week or so I have been really putting it to good use and today was definitely the most by far- it might have been a little TOO much, but it was still fun.

I started my day by cooking my oatmeal and packing it up to eat at the gym. I have to get there so early to get a bike now that I just eat in the locker room most days that I cycle.

-1/2 cup rolled oats, water, unsweetened vanilla almond milk

-1 medium banana

sweet potato raisin muffin crumbled on top

I loved the muffin on top! Afterwards my belly felt a little full I wasn’t sure if it would give me problems cycling immediately afterwards, but I ended up being fine.

After a great spin class with the same instructor from yesterday, I rode my bike to Kmart for some necessities and spent some time wandering the aisles. Then I stopped by Jamba Juice to put my gift card from Christmas to good use. I love their steel-cut oatmeal but since I already had oatmeal this morning I was just going to stick with a smoothie, but when she asked if I wanted oatmeal or a baked good for $1 I couldn’t turn it down.

I was halfway through before I remembered to take a picture. I got it with banana slices on top & no brown sugar crumbles. They called them “crumbles” but they are more like huge clumps of sugar.

I also got a sixteen strawberry nirvana and a banana. I love putting slices on top of the smoothie and eating it with a spoon.

All together & enjoyed on a bright, sunny, beautiful California day!

I was pretty exhausted at this point as I had already been gone from the house for 3 1/2 hours and started to regret my biking adventure. But I trudged on home and felt very accomplished, but exhausted. Still after my big Jamba lunch I came home hungry. I grabbed a pink lady apple and some carrots since my lunch lacked veggies and slathered them with my fake pb. 🙂

Well I’m pretty beat- but I definitely had a fun morning and blasted lots of calories so I am not making any promises for photographing my intake today- I’m sure I’ll be ravenous all day and I might be at the gym again with Chris later for his workout- so we’ll see! Happy Friday!

I Eat A Lot

Dang man, I feel like I eat a lot when I photograph everything I eat. Or at least it seems like I’m eating all the time when I keep whipping out the camera.

Today was a good day- not the most productive, but hey, I’m unemployed. I’m entitled to be unproductive. 🙂

In the afternoon my tummy started rumbling again so I warmed up a PB clif z-bar in the micro- it totally felt like a dessert- delish!DSCN0142

Grr for blurry pictures.

I spent the afternoon doing some baking and was planning to make myself dinner when my mom offered to go out for dinner. It’s hard to turn down a free meal. We went to my new favorite restaurant lately, Red Brick Pizza. For some reason I really love their Chicken Caesar Salad more than other places. It’s HUGE for the price- so maybe that’s why. And they have good croutons.

I also had half a slice of Chris’ Veggie pizza which I forgot to photograph. It was good though and I normally don’t like things with that many veggies on it. Then even though I was content, my bad-influence wonderful mother suggested frozen yogurt from Yogurt Land across the street. Now how can I turn that offer down?!

I got non-fat chocolate/butterfinger swirl fro-yo topped with banana slices (!!!!), peanut butter swirl chocolate chips, brownie bites, cookie dough, and peanut butter cup. It was amazing.

I’ve been listening to Pandora radio all day and I love every song they’ve played so far– how come I haven’t done this earlier?!

I’ll share what I baked tomorrow. Goodnight!
